Brisket flat vs point.
A brisket is two muscles lying one on top of the other, and a whole packer is both of them still joined. The flat is the long lean one underneath, and it is what gets sliced. The point sits on top, carries most of the fat, and is the only place burnt ends come from. Buy a packer and you get both. Buy a first cut and you get the lean one on its own. Neither is a separate cut of the animal, and neither cooks to a different number.
Their grain runs in different directions, which is the single most common way a good brisket gets ruined at the very last step, and the table below says how to handle it. The other thing worth knowing before you buy is yield: trimmed and cooked, a packer gives up roughly half the weight you paid for.

Both cook to the same numbers
145 F (62.8 C), then rest at least 3 minutes before carving or consuming
Steaks, chops and roasts (whole muscle). Food thermometer in the thickest part, away from bone, fat and gristle, read before removing from the heat source. This is a food safety floor, not a preference. Where any other number on this page is lower, this one governs.

195 to 205 F, probe tender
Brisket commonly becomes tender between 195 and 205 F, but the number is a checkpoint. It is done when a probe enters the flat with very little resistance. Texas A&M Meat Science puts the collagen-to-gelatin conversion at an internal temperature of 185 to 195 F; backyard convention runs about 10 degrees higher because the flat keeps tightening until the last of it lets go. 203 F is a useful place to start checking, not a guaranteed endpoint.
Which one to put in the cart
Cook a packer if you want burnt ends, because they come off the point and there is no other source on the animal. Buy the flat alone if you want clean slices and less trimming, and accept that it dries faster with no fat cap above it feeding it. Whichever you buy, the safety floor is 145 F and the probe tender test decides when it is actually ready, 195 to 205 F being where that usually lands. Beef does not care what the label said.
- Where the probe goes. Insert the thermometer into the thickest part of the food, not touching bone, fat or gristle. For thin foods insert through the side. Check large or irregular pieces in several places. For a whole bird check the innermost thigh and wing and the thickest part of the breast.
- Colour is not doneness. Appearance and colour are not reliable indicators of safety or doneness. A burger can be brown and unsafe or pink and safe. Pork at 145 F can be pink. Smoked chicken can stay pink at the bone at 165 F.
