- 01
Whisk everything together in a small pan.
- 02
Bring it to a bare simmer over medium-low heat. Cook 10 to 15 minutes and keep stirring. It thickens a little and the raw vinegar edge softens.
- 03
Cool it. It thickens more as it cools. Keeps in the fridge for 2 weeks.
- 04
Serve it at the table with pulled pork. Or brush it on ribs and chops in the last 15 to 30 minutes on the pit.
- Untested draft. Concept from the approved Pit Log pork graphic. South Carolina style: mustard first, sugar second.
- Skip the honey and add one more tablespoon of vinegar for a sharper version.
- Sauce in the last 15 to 30 minutes. If using a sauce, apply it during the last 15 to 30 minutes of smoking to prevent excess browning or burning.
- SaucepanSauce recipes. Low value; probably omit.
